Chicken Primavera

OH.MY.
Have you ever tried a recipe that is to die for?
Okay… this one is just that.

I’ve learned it is so important to FUEL your body and fuel it with the right things!
Eating healthy doesn’t have to be bland.. ugh.
You can have yummy and amazing meals while it is FUELING your body
and here my friends is just that…
Chicken Primavera, WAIT WHAT!
Ingredients: 
1 spaghetti squash
Extra virgin olive oil
1 white onion
1 large garlic clove
1 large zucchini
1 tablespoon Italian seasoning
1 cup cherry tomatoes
1 tablespoon lemon juice
2 chicken breasts
Directions:
Preheat oven to 375
Cut spaghetti squash in half, de-seed, rub olive oil and cracked pepper on inside of squash.
Place squash with the inside of the squash facing down on baking tray to cook for about 45 minutes.
Remove squash, allow to cool and using a fork pull “spaghetti” flesh out of the squash.
While that is cooking…
Cut all your veggies in halves
Season chicken breast with pinch of salt, italian seasonings and fresh cracked pepper
Bake chicken for 15-18 minutes (165 deg internal temp)
Then you will want to heat skillet
Add olive oil and garlic, stir 1 minute
Add lemon juice
Add diced onion and quartered zucchini and cook until crisp yet tender
Then add halved cherry tomatoes
Combine squash, chicken and skillet mixture onto a plate, season with cracked pepper and salt as necessary.
That easy!
